Chunky Artichoke Salmon Surpise

Horrible name but I have no idea what to call this dish. It isn’t exactly a soup, a dip or a spread, but it could be made into any of those with some adjustments to your liking. Feeling lazy and don’t want to make a meal from scratch? Cool, neither did I. I picked up some random ingredients, mostly from Trader Joe’s, and put it together. Here’s what I had:

  • Canned salmon
  • Canned spinach
  • Canned artichoke hearts
  • Canned garbanzo beans
  • 4 fresh mushrooms, chopped
  • 1/2 cup cherry tomatoes, halved
  • Seasonings

While sauteing your mushrooms, (or you can buy canned mushrooms), drain the beans and cook them with a half a cup of water or vegetable stalk, more if you want it thinner. Boil until almost fully cooked then add mushrooms and halved tomatoes. Stir for a bit then add artichoke hearts and tear into pieces, then add the drained spinach and drained canned salmon. Stir and cook for another 5 minutes, add salt and pepper to taste. I also added garlic salt because I love it. Another addition that could be added is pesto sauce, it would go well with all the other ingredients. When it’s finished it’s a thick, flavorful and savory dinner. Pair with some bread, maybe some Parmesan sprinkled on top and it’s delicious! Enjoy with a nice glass of wine.
